High Protein Breakfast Casserole
Easy Sausage Breakfast Bake (High-Protein & Make-Ahead!)
If you need a breakfast that basically cooks itself and keeps you full all morning, this easy sausage bake is it. It’s high-protein, customizable, and perfect for busy weekdays—or when you just want something cozy ready to reheat.
Ingredients
½–1 lb sausage, cooked
(I like to use less… my husband likes more. Marriage is all about balance, right?)6 eggs
1 cup milk
¾ cup shredded cheese (any kind you love)
1 can diced green chilis
1 tsp mustard
1–2 slices of bread or buns, cubed
Instructions
Preheat your oven to 350°F.
Lightly grease a 9x9 baking dish.
In the dish, mix together the cooked sausage, eggs, milk, cheese, diced chilis, mustard, and cubed bread.
(Yep—mix it all right in the pan. One less bowl to wash!)Bake uncovered for 40–45 minutes, or until the center is set and the top is lightly golden.
Let it rest for 10–15 minutes before slicing. This step helps it firm up and makes serving easier.

Want to make this even more filling and gut-friendly? Add chopped veggies like bell peppers, spinach, onion, or zucchini.
Just avoid frozen veggies—they release too much water and can make the bake soggy.
